Food and drinks
The Chabrochanto agriturism is not a restaurant but a place where you can taste our products, where we can share our values, our emotions and enthusiasm through food! We propose our goat cheese selection, goat and kid goat based dishes, cold cuts and a lot of meat recipes inspired by the shepherd tradition. All this accompanied by the bread (made from organic flours and cooked in the wood oven) and the wines, coming from selected vineyards, and home brewed beers.
We live in a farm and this means we are pleased to show our everyday life set by the goats’ activities and the cheese production cycle. Moreover the possibility to be hosted and have your meals here makes it possible to mature a complete vision of life in the mountains.
- The shepherd’s path: from milking to pasture, on the trails of an ancient job.
- The art of cheese: how we produce cheese
-Farming: how to grow a family garden
- The rediscovery of senses: from the kitchen to the dining room.
-Growing one’s mind: AgriCultura feasts.
We work in a non-transhumant mountain farming. That means we live in Alpe (our location is at 970 metres) all the year through, also in winter, breeding milch goats (almost all are Saanen goats) that in the mountains are usually bred under intensive system. On the contrary in our farming they have been chosen exactly for their pasture and country capacities even though this reduces the level of production.
Only snow can limit the pasture season: usually we don’t pasture between December and half April. We will never renounce it: it is the real reason for our animals’ wellbeing, the base for a high quality cheese production, the smartest and most ecological way to recover the production and landscape of those marginal fields (deep slopes) which have been abandoned for decades and in the end, it is the deepest and most ancient meaning of our job.
We manage a small cheese factory in the hamlet, a few hundreds metres far from the stables, where we process our milk only (more or less 25000 litres every year) from the end of March (the first milk is destined to young goats) to November.
In winter goats are pregnant and dry, they rest and don’t give milk, so cheese production is suspended.
We process row milk: that means milk doesn’t undergo any chemical treatments (pasteurization) that because of sterilization, deprive it from vitamins, trace elements and enzymes that express the taste and flavours of our territory in which animals are put to pasture. Almost all our cheeses come from milk curd: that means that before curdling, milk is left to acidify at a checked temperature so that the natural milk bacteria (or those bacteria from a previous process skilfully added by the cheese maker) that are the natural expression of their “terroir”, can “eat” the lactose (the milk sugar) so producing lactic acid. The resulting cheese is the typical caprino, characterized with a slightly acid taste, soft paste and small size.
In 2008 we opened our La Chabrochanto agriturism, a place that represents us, where the heat from the wood stove, the antique furniture and the local grès building materials are here to welcome you in a warm family atmosphere.
This facility is not a restaurant but a place where you can taste our products, where we can share our values, our emotions and enthusiasm through food… and also tell what living in the mountain and of the mountain means today. Since summer 2015, La Chabrochanto proposes two new rooms (with bathroom) whose windows face Val Maira mountains with a special view on the lose roofs of our hamlet.
The essential warm furniture, made of old wood, ecological oils and natural fibres fabric make it the ideal place to rest enjoying a good novel and a lovely landscape after a long day full of emotions and discoveries.
